PAP / BANKU / AKAMU/ OGI / UGALI / SADZA
Banku/Pap (auch: Obenku, Akpele) ist neben Joloffreis, Fufu und Kelawele ein ghanaisches Nationalgericht. Banku wird aus Maismehl hergestellt, in dem es mit Wasser angemacht und zu einem Kloß gedreht wird. Dieser Maismehlkloß wird traditionell in Maisblätter gewickelt und in siedendem Wasser gegart. Banku wird gerne mit würzigen Soßen gegessen und kann gut vorbereitet werden.

Pap/Banku, a traditional porridge made from mielie-meal (ground maize or other grain), is a staple food of the Bantu inhabitants of South Africa (the Afrikaans word "pap" simply means "porridge" or "gruel"). Many traditional South African dishes include pap, such as smooth maize meal porridge (also called slap pap), and crumbly "phutu" (pronounced "poo-too") pap. Such dishes are enjoyed primarily by the indigenous black population and the Afrikaner population, rather than those of English or South Asian descent 

 

 

Pepper Soup

Pfeffersuppe ist in Westafrika verbreitet. Sie enthält nicht mehr Pfeffer als andere afrikanische Suppen. Sie wird üblicherweise mit Ziegen- oder Rindfleisch gekocht, kann aber auch mit Hühner- oder Lammfleisch zubereitet werden. Sie enthält Fleischbrühe, Zwiebeln, afrikanische Kräuter und Gewürze.

 

Pepper Soup or Peppersoup—which is especially popular in the English-speaking countries of Western Africa: Ghana, Liberia, Sierra Leone, and Nigeria—doesn't have any more pepper than many other African soups. It is usually made with goat meat, but can also be made with beef, chicken, or mutton. There are many ways this soup can be seasoned.
